You asked
7artisans 18mm f 5 6 vs laowa 15mm f 5 cookie ff?
The Laowa 15mm f/5 Cookie FF is the wider of the two, and I'd pick it for most landscape and architecture work. It frames as 15mm on full frame, and it's a slim pancake, so it's easy to carry. It also fits more mounts: Sony E, Nikon Z, Canon RF, L-Mount and Leica M, against Sony E, Nikon Z and L-Mount for the 7Artisans 18mm f/5.6. If you shoot Canon RF or Leica M, the 7Artisans isn't an option at all.
The 7Artisans is the choice if you want a little less distortion and a bit more reach at the same price tier, and 18mm is still a comfortable everyday wide. Both are manual focus and neither is stabilised, so expect to focus by hand.
If you want the widest full-frame view you can get, look at the Laowa 9mm f/5.6 FF RL. For how the sensor size changes the field of view and depth of field, see the sensor sizes guide.
